Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the chicken pieces and brown on all sides.
3. Remove the chicken and set aside.
4. In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
5. Stir in the tomato paste, thyme, salt, and black pepper.
6. Return the chicken to the pot and add the chicken broth.
7. Bring to a boil, then reduce heat and simmer for 30 minutes or until the chicken is cooked through.
