Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell Pepper chopped
  • 2 cups Chicken Broth
  • 1 tbsp Tomato Paste
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 1 tsp Black Pepper or to taste
  • 2 tbsp Vegetable Oil

Instructions: 

  • 1. Heat the oil in a large pot over medium heat.
  • 2. Add the chicken pieces and brown on all sides.
  • 3. Remove the chicken and set aside.
  • 4. In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
  • 5. Stir in the tomato paste, thyme, salt, and black pepper.
  • 6. Return the chicken to the pot and add the chicken broth.
  • 7. Bring to a boil, then reduce heat and simmer for 30 minutes or until the chicken is cooked through.

Notes:

Serve with rice or bread.
