Instructions:
Heat olive oil in a large pot over medium heat.
Add pork and cook until browned on all sides.
Add diced onion and cook until softened.
Stir in minced garlic, cumin, oregano, salt, and pepper.
Add chicken broth and bring to a boil.
Reduce heat, cover, and simmer for 1 hour.
Add hominy and cook for an additional 30 minutes.
Adjust seasoning if needed and serve hot.
Notes:
This stew is even better the next day, so consider making it ahead of time.
