Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 4 Potatoes peeled and diced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Thyme
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef stew meat and cook until browned on all sides.
  • 3. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  • 4. Stir in the tomato paste, dried thyme, salt, and black pepper.
  • 5. Add the beef broth and bring to a boil.
  • 6. Reduce the heat to low, cover, and simmer for 1.5 hours.
  • 7. Add the diced potatoes and continue to simmer for another 30 minutes, or until the potatoes are tender.
  • 8. Adjust seasoning with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables like carrots or peas for more flavor and nutrition.
