Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onion and minced garlic, and cook until the onion is translucent.
4. Stir in the tomato paste, dried thyme, salt, and black pepper.
5. Add the beef broth and bring to a boil.
6. Reduce the heat to low, cover, and simmer for 1.5 hours.
7. Add the diced potatoes and continue to simmer for another 30 minutes, or until the potatoes are tender.
8. Adjust seasoning with salt and pepper to taste before serving.
Notes:
Feel free to add other vegetables like carrots or peas for more flavor and nutrition.
