Ingredients:  

Main Ingredients

  • 2 cups Leftover pulled pork
  • 1 cup Chopped onions
  • 2 cups Diced potatoes
  • 1 cup Chopped carrots
  • 4 cups Chicken broth
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • 1. In a large pot, sauté the chopped onions until they are translucent.
  • 2. Add the diced potatoes and chopped carrots to the pot and cook for about 5 minutes.
  • 3. Pour in the chicken broth and bring to a boil.
  • 4. Reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  • 5. Add the leftover pulled pork to the pot and stir well.
  • 6. Season with salt and black pepper to taste.
  • 7. Let it simmer for another 10 minutes to allow the flavors to meld together.
  • 8. Serve hot and enjoy!

Great way to use up leftover pulled pork.
