Instructions:
1. Heat the olive oil in a Dutch oven over the campfire.
2. Add the beef and cook until browned on all sides.
3. Add the onions and garlic, cooking until softened.
4. Stir in the tomato paste, beef broth, salt, and pepper.
5. Add the carrots and potatoes, bring to a boil.
6. Reduce heat and simmer for about 2 hours, or until the meat is tender.
