Ingredients:  

Main Ingredients

  • 1 cup lentils rinsed
  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste salt and pepper

Instructions: 

  • 1. Heat a large pot over medium heat. Add a splash of oil.
  • 2. Add the chopped onion and minced garlic. Sauté until fragrant.
  • 3. Add the diced sweet potatoes and rinsed lentils. Stir to combine.
  • 4. Pour in the vegetable broth. Add cumin and paprika. Stir well.
  • 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until lentils and sweet potatoes are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is great for meal prep and can be stored in the fridge for up to 5 days.
