Ingredients:

Instructions:
1. Heat a large pot over medium heat. Add a splash of oil.
2. Add the chopped onion and minced garlic. Sauté until fragrant.
3. Add the diced sweet potatoes and rinsed lentils. Stir to combine.
4. Pour in the vegetable broth. Add cumin and paprika. Stir well.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until lentils and sweet potatoes are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is great for meal prep and can be stored in the fridge for up to 5 days.
