Ingredients:  

Main Ingredients

  • 2 lbs beef chuck cut into chunks
  • 2 cups beef broth
  • 1 cup red wine
  • 4 carrots peeled and chopped
  • 4 potatoes peeled and chopped
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 2 tsp thyme dried
  • 2 tsp rosemary dried

Instructions: 

  • 1. Preheat your smoker to 225°F (107°C).
  • 2. Season the beef chunks with salt, pepper, and smoked paprika.
  • 3. Place the beef in the smoker and smoke for 1 hour.
  • 4. In a Dutch oven, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
  • 5. Stir in the tomato paste and cook for another 2 minutes.
  • 6. Add the smoked beef, beef broth, red wine, carrots, potatoes, thyme, and rosemary. Bring to a boil.
  • 7. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.
  • 8. Adjust seasoning with salt and pepper to taste before serving.

Notes:

This smoked beef stew is perfect for a cozy dinner. Serve with crusty bread.
