Instructions:
1. Preheat your smoker to 225°F (107°C).
2. Season the beef chunks with salt, pepper, and smoked paprika.
3. Place the beef in the smoker and smoke for 1 hour.
4. In a Dutch oven, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.
5. Stir in the tomato paste and cook for another 2 minutes.
6. Add the smoked beef, beef broth, red wine, carrots, potatoes, thyme, and rosemary. Bring to a boil.
7. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef is tender.
8. Adjust seasoning with salt and pepper to taste before serving.
