beef stew meat, cubed

berbere spice mix

beef broth

diced tomatoes

Instructions:
Heat the oil in a large pot over medium heat.
Add the chopped onion and cook until golden brown.
Add the garlic and ginger, cook for another minute.
Add the beef and cook until browned on all sides.
Stir in the berbere spice mix and cook for another 2 minutes.
Add the beef broth, diced tomatoes, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1.5 hours or until the beef is tender.
Notes:
Serve with injera or rice.
