Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 lb beef stew meat, cubed
  • 2 tbsp berbere spice mix
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Heat the oil in a large pot over medium heat.
  • Add the chopped onion and cook until golden brown.
  • Add the garlic and ginger, cook for another minute.
  • Add the beef and cook until browned on all sides.
  • Stir in the berbere spice mix and cook for another 2 minutes.
  • Add the beef broth, diced tomatoes, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1.5 hours or until the beef is tender.

Notes:

Serve with injera or rice.
