Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 0.5 tsp ground turmeric
  • 0.25 tsp cayenne pepper
  • 2 large carrots, sliced
  • 1 large sweet potato, peeled and cubed
  • 1 can chickpeas, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
  • 0.25 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  • Stir in cumin, coriander, cinnamon, turmeric, and cayenne pepper. Cook for 1 minute.
  • Add carrots, sweet potato, chickpeas, tomatoes, and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 30 minutes, until vegetables are tender.
  • Stir in dried apricots, season with salt and pepper. Cook for another 5 minutes.
  • Serve hot, garnished with fresh cilantro.

Notes:

This stew is perfect for a cozy dinner and can be served with rice or bread.
