Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until golden brown.
Add the cumin and turmeric powders. Stir well.
Add the rinsed lentils, tamarind paste, and water. Bring to a boil.
Reduce heat and let it simmer for 30-35 minutes, or until lentils are tender.
Season with salt to taste. Serve hot.
Notes:
This stew pairs well with rice or bread.
