Ingredients:  

Main Ingredients

  • 1 bunch Kale chopped
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 cups Vegetable broth
  • 1 can Diced tomatoes 14.5 oz
  • 1 cup Chickpeas cooked
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the diced onion and cook until translucent, about 5 minutes.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the chopped kale and cook until wilted, about 5 minutes.
  • 5. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  • 6. Reduce the heat and simmer for 20 minutes.
  • 7. Add the cooked chickpeas, salt, and black pepper. Simmer for another 10 minutes.
  • 8. Serve hot and enjoy!

Notes:

You can add other vegetables like carrots or potatoes for extra heartiness.
