Olive oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the diced onion and cook until translucent, about 5 minutes.
3. Stir in the minced garlic and cook for another minute.
4. Add the chopped kale and cook until wilted, about 5 minutes.
5. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
6. Reduce the heat and simmer for 20 minutes.
7. Add the cooked chickpeas, salt, and black pepper. Simmer for another 10 minutes.
8. Serve hot and enjoy!
Notes:
You can add other vegetables like carrots or potatoes for extra heartiness.
