Ingredients:  

Main Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cups beef broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 tbsp Cajun seasoning
  • 1 tsp thyme
  • 1 bay leaf
  • to taste Salt and pepper
  • 2 cups potatoes, cubed
  • 1 cup carrots, sliced

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add onion, garlic, bell peppers, and celery. Cook until vegetables are tender.
  • Stir in beef broth, diced tomatoes, Cajun seasoning, thyme, and bay leaf. Bring to a boil.
  • Reduce heat, cover, and simmer for 1 hour.
  • Add potatoes and carrots. Simmer for another hour or until vegetables are tender.
  • Season with salt and pepper to taste. Remove bay leaf before serving.
