beef broth

Salt and pepper

Instructions:
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add onion, garlic, bell peppers, and celery. Cook until vegetables are tender.
Stir in beef broth, diced tomatoes, Cajun seasoning, thyme, and bay leaf. Bring to a boil.
Reduce heat, cover, and simmer for 1 hour.
Add potatoes and carrots. Simmer for another hour or until vegetables are tender.
Season with salt and pepper to taste. Remove bay leaf before serving.
Notes:
