Ingredients:  

Main Ingredients

  • 1 whole chicken cut into pieces
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 large tomatoes chopped
  • 1 large bell pepper chopped
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground achiote
  • to taste salt and pepper
  • 2 tbsp vegetable oil
  • 1 bunch cilantro chopped, for garnish

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove and set aside.
  • 2. In the same pot, add the onion, garlic, tomatoes, and bell pepper. Cook until softened.
  • 3. Add the chicken back to the pot. Pour in the chicken broth, cumin, and achiote. Season with salt and pepper.
  • 4. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
  • 5. Garnish with chopped cilantro before serving.

Notes:

This stew is perfect served with rice or potatoes.
