Ingredients:

bell pepper

chicken broth

ground cumin

tsp
ground achiote
to taste
salt and pepper

tbsp
vegetable oil
1
bunch
cilantro
chopped, for garnish
Instructions:
1. Heat the oil in a large pot over medium heat. Add the chicken pieces and brown on all sides. Remove and set aside.
2. In the same pot, add the onion, garlic, tomatoes, and bell pepper. Cook until softened.
3. Add the chicken back to the pot. Pour in the chicken broth, cumin, and achiote. Season with salt and pepper.
4. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chicken is cooked through.
5. Garnish with chopped cilantro before serving.
Notes:
This stew is perfect served with rice or potatoes.
