1. In a large pot, add the soaked red kidney beans and enough water to cover them. Bring to a boil, then reduce to a simmer and cook until tender, about 60 minutes.
2. Add the coconut milk, dumplings (if using), salt, black pepper, garlic, Scotch bonnet pepper, thyme, and scallions to the pot. Stir well.
3. Continue to simmer for another 30 minutes, or until the sauce has thickened and the flavors have melded together.
4. Remove the Scotch bonnet pepper and thyme sprig before serving. Enjoy your stew peas hot!
Notes:
For a richer flavor, you can add some pimento seeds and a piece of smoked meat like pig's tail or salted beef.
