Ingredients:  

Main Ingredients

  • 2 cups Red Kidney Beans soaked overnight
  • 1 can Coconut Milk
  • 1 cup Dumplings optional
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 cloves Garlic minced
  • 1 whole Scotch Bonnet Pepper optional
  • 1 sprig Thyme
  • 2 stalks Scallions chopped

Instructions: 

  • 1. In a large pot, add the soaked red kidney beans and enough water to cover them. Bring to a boil, then reduce to a simmer and cook until tender, about 60 minutes.
  • 2. Add the coconut milk, dumplings (if using), salt, black pepper, garlic, Scotch bonnet pepper, thyme, and scallions to the pot. Stir well.
  • 3. Continue to simmer for another 30 minutes, or until the sauce has thickened and the flavors have melded together.
  • 4. Remove the Scotch bonnet pepper and thyme sprig before serving. Enjoy your stew peas hot!

Notes:

For a richer flavor, you can add some pimento seeds and a piece of smoked meat like pig's tail or salted beef.
