Lamb shoulder, cut into chunks

Olive oil

Large onion, chopped

Garlic, minced

Tomatoes, chopped

Red wine

Beef broth

Dried oregano

Ground cinnamon
to taste
Salt and pepper

Fresh parsley, chopped

Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the lamb and brown on all sides.
2. Remove the lamb and set aside. In the same pot, add the onion and garlic, and cook until softened.
3. Return the lamb to the pot. Add the tomatoes, red wine, beef broth, oregano, cinnamon, salt, and pepper.
4. Bring to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the lamb is tender.
5. Garnish with fresh parsley before serving.
