Instructions:
1. Heat a large pot over medium heat. Add the sausage and cook until browned. Remove and set aside.
2. In the same pot, add the chicken thighs and cook until browned on all sides. Remove and set aside.
3. Add the onion and garlic to the pot and cook until softened.
4. Pour in the chicken broth, then add the carrots, celery, thyme, salt, and pepper. Stir well.
5. Return the sausage and chicken to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Serve hot and enjoy!

This stew is even better the next day.
