Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 can Diced Tomatoes 14.5 oz can
  • 4 cups Beef Broth
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 2 cups Potatoes diced

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
  • Add chopped onion and minced garlic. Cook until onion is translucent.
  • Add carrots and celery. Cook for a few minutes until they start to soften.
  • Stir in diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour.
  • Add diced potatoes and continue to simmer for another 30 minutes, or until potatoes are tender.
  • Adjust seasoning with salt and pepper if needed. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
