Instructions:
Heat olive oil in a large pot over medium heat. Add beef and cook until browned.
Add chopped onion and minced garlic. Cook until onion is translucent.
Add carrots and celery. Cook for a few minutes until they start to soften.
Stir in diced tomatoes, beef broth, oregano, basil, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 1 hour.
Add diced potatoes and continue to simmer for another 30 minutes, or until potatoes are tender.
Adjust seasoning with salt and pepper if needed. Serve hot.
Notes:
This stew is even better the next day. Store leftovers in the fridge and reheat gently.
