Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 lb Italian sausage sliced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 cans white beans drained and rinsed
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 2 cups kale chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the sausage and cook until browned.
  • Add the onion and garlic, and cook until softened.
  • Add the white beans, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Add the kale and cook for another 5 minutes.
  • Serve hot.

This stew is even better the next day!
