Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add minced garlic and red bell pepper, cook for another 5 minutes.
Stir in diced tomatoes, fish stock, paprika, salt, and black pepper. Bring to a simmer.
Add cod chunks to the pot and simmer for 15-20 minutes, until the fish is cooked through.
Garnish with fresh parsley before serving.
Notes:
Serve with crusty bread or over rice for a complete meal.
