Guinness Beer

Instructions:
Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
In the same pot, add onions and garlic. Cook until onions are translucent.
Stir in tomato paste, thyme, salt, and pepper. Cook for another minute.
Return beef to the pot. Pour in Guinness beer and beef broth. Bring to a boil, then reduce heat and simmer for 1 hour.
Add carrots and potatoes. Simmer for another hour, or until vegetables and beef are tender.
Serve hot and enjoy!
Notes:
For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
