Olive Oil
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the beef stew meat and brown on all sides.
3. Remove the meat and set aside. In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
4. Return the meat to the pot. Add the beef broth, diced tomatoes, cumin, chili powder, salt, and black pepper.
5. Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the meat is tender.
6. Serve hot with rice or tortillas.
Notes:
Feel free to add potatoes or carrots for extra heartiness.
