Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell Pepper chopped
  • 2 cups Beef Broth
  • 1 can Diced Tomatoes
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef stew meat and brown on all sides.
  • 3. Remove the meat and set aside. In the same pot, add the onion, garlic, and bell pepper. Cook until softened.
  • 4. Return the meat to the pot. Add the beef broth, diced tomatoes, cumin, chili powder, salt, and black pepper.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for about 2 hours, or until the meat is tender.
  • 6. Serve hot with rice or tortillas.

Notes:

Feel free to add potatoes or carrots for extra heartiness.
