Ingredients:  

Main Ingredients

  • 2 cups leftover brisket, shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced carrots, celery, and potatoes. Cook until they start to soften, about 10 minutes.
  • Add the shredded leftover brisket and stir to combine.
  • Pour in the beef broth and bring to a simmer.
  • Reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
  • Add the frozen peas and cook for another 5 minutes.
  • Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is a great way to use up leftover brisket. Feel free to add other vegetables you have on hand.
