leftover brisket, shredded

carrots, diced

celery, diced

potatoes, diced

beef broth

olive oil
Instructions:
Heat olive oil in a large pot over medium heat.
Add diced carrots, celery, and potatoes. Cook until they start to soften, about 10 minutes.
Add the shredded leftover brisket and stir to combine.
Pour in the beef broth and bring to a simmer.
Reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.
Add the frozen peas and cook for another 5 minutes.
Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is a great way to use up leftover brisket. Feel free to add other vegetables you have on hand.
