Ingredients:  

Main Ingredients

  • 1 bunch Callaloo chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Thyme fresh
  • 1 cup Coconut milk
  • 1 cup Vegetable broth
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Vegetable oil

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 3. Add the chopped callaloo, thyme, salt, and black pepper. Stir well.
  • 4. Pour in the coconut milk and vegetable broth. Bring to a boil.
  • 5. Reduce heat to low and let it simmer for about 20 minutes, or until the callaloo is tender.
  • 6. Serve hot and enjoy!

Notes:

This stew pairs well with rice or bread. Adjust the seasoning to your taste.
