Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Add the chopped callaloo, thyme, salt, and black pepper. Stir well.
4. Pour in the coconut milk and vegetable broth. Bring to a boil.
5. Reduce heat to low and let it simmer for about 20 minutes, or until the callaloo is tender.
6. Serve hot and enjoy!
Notes:
This stew pairs well with rice or bread. Adjust the seasoning to your taste.
