Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onion and minced garlic, and cook until softened.
4. Pour in the beef broth and bring to a boil.
5. Add the sliced carrots and diced potatoes.
6. Season with salt and black pepper.
7. Reduce the heat to low, cover, and let it simmer for about 2 hours, or until the meat is tender.
8. Serve hot and enjoy!

Feel free to add other vegetables like peas or corn for extra flavor.
