Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 0.5 tsp chili powder
  • 2 cans chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions: 

  • Heat oil in a large pot over medium heat. Add cumin and mustard seeds, cook until they start to pop.
  • Add chopped onion, cook until soft and golden.
  • Stir in garlic and ginger, cook for another minute.
  • Add turmeric, ground coriander, garam masala, and chili powder. Cook for 2 minutes.
  • Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Season with salt to taste. Garnish with fresh cilantro before serving.

Notes:

This stew is perfect served with rice or naan bread.
