Salt to taste
Fresh cilantro, chopped (for garnish)
Instructions:
Heat oil in a large pot over medium heat. Add cumin and mustard seeds, cook until they start to pop.
Add chopped onion, cook until soft and golden.
Stir in garlic and ginger, cook for another minute.
Add turmeric, ground coriander, garam masala, and chili powder. Cook for 2 minutes.
Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt to taste. Garnish with fresh cilantro before serving.
Notes:
This stew is perfect served with rice or naan bread.
