Ingredients:  

Main Ingredients

  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 2 potatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until softened.
  • Add carrots, parsnips, and potatoes, cook for 5 minutes.
  • Pour in vegetable broth, add thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 40 minutes.

Notes:

Feel free to add other root vegetables you like.
