Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add carrots, parsnips, and potatoes, cook for 5 minutes.
Pour in vegetable broth, add thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 40 minutes.
Notes:
Feel free to add other root vegetables you like.
