Olive Oil
Instructions:
Heat olive oil in a large pot over medium heat.
Add beef stew meat and cook until browned on all sides.
Add onion and garlic, cook until softened.
Stir in tomato paste, salt, and pepper.
Add beef broth, bring to a boil, then reduce heat and simmer for 1 hour.
Add potatoes and carrots, simmer for another 1 hour or until vegetables are tender.
Serve hot and enjoy!
Notes:
For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
