Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 4 Potatoes peeled and diced
  • 2 Carrots sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat and cook until browned on all sides.
  • Add onion and garlic, cook until softened.
  • Stir in tomato paste, salt, and pepper.
  • Add beef broth, bring to a boil, then reduce heat and simmer for 1 hour.
  • Add potatoes and carrots, simmer for another 1 hour or until vegetables are tender.
  • Serve hot and enjoy!

Notes:

For a thicker stew, you can add a slurry of cornstarch and water towards the end of cooking.
