Peruvian Chicken Stew

Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 cup Tomatoes diced
  • 2 cups Chicken Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 cups Potatoes peeled and diced
  • 1 cup Peas
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chicken pieces and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
  • 4. Add the diced tomatoes, chicken broth, cumin, and paprika. Stir well.
  • 5. Return the chicken to the pot. Add the diced potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Add the peas and cook for another 10 minutes. Season with salt and pepper to taste.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add more vegetables like carrots or bell peppers.
