Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chicken pieces and brown on all sides. Remove and set aside.
3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
4. Add the diced tomatoes, chicken broth, cumin, and paprika. Stir well.
5. Return the chicken to the pot. Add the diced potatoes. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Add the peas and cook for another 10 minutes. Season with salt and pepper to taste.
7. Serve hot and enjoy!
Notes:
Feel free to add more vegetables like carrots or bell peppers.
