Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until translucent.
3. Add turtle meat chunks and cook until browned.
4. Pour in diced tomatoes and chicken broth.
5. Add salt, black pepper, and bay leaves. Stir well.
6. Bring to a boil, then reduce heat and simmer for 2 hours.
7. Remove bay leaves before serving.
Notes:
Serve hot with crusty bread.
