Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 sweet potatoes, peeled and cubed
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1/2 cup peanut butter
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup spinach, chopped
  • 1/4 cup chopped peanuts (for garnish)

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic, and cook until softened, about 5 minutes.
  • Add the red bell pepper and sweet potatoes, and cook for another 5 minutes.
  • Stir in the vegetable broth, diced tomatoes, peanut butter, cumin, coriander, salt, and black pepper.
  • Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the sweet potatoes are tender.
  • Stir in the spinach and cook for another 2-3 minutes, until wilted.
  • Serve hot, garnished with chopped peanuts.

This stew is perfect for a cozy dinner. Feel free to adjust the spices to your liking.
