Instructions:
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic, and cook until softened, about 5 minutes.
Add the red bell pepper and sweet potatoes, and cook for another 5 minutes.
Stir in the vegetable broth, diced tomatoes, peanut butter, cumin, coriander, salt, and black pepper.
Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the sweet potatoes are tender.
Stir in the spinach and cook for another 2-3 minutes, until wilted.
Serve hot, garnished with chopped peanuts.
