fish fillets (tilapia or any white fish)

vegetable oil

onion, chopped

cloves
garlic, minced

inch piece
ginger, minced
1
bell pepper, chopped

tomatoes, chopped
1
cup
fish stock or water

tsp
paprika

tsp
curry powder

tsp
thyme
Salt and pepper to taste

lemon, juiced
Fresh parsley, chopped (for garnish)
Instructions:
Heat oil in a large pot over medium heat.
Add onions, garlic, and ginger. Sauté until fragrant.
Add bell pepper and tomatoes. Cook until softened.
Stir in paprika, curry powder, and thyme. Cook for another minute.
Pour in fish stock or water. Bring to a simmer.
Add fish fillets. Cover and cook for 10-15 minutes until fish is cooked through.
Season with salt, pepper, and lemon juice.
Garnish with fresh parsley before serving.
Notes:
This stew is perfect with rice or bread.
