Ingredients:  

Main Ingredients

  • 2 lbs fish fillets (tilapia or any white fish)
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 cup fish stock or water
  • 1 tsp paprika
  • 1 tsp curry powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 lemon, juiced
  • Fresh parsley, chopped (for garnish)

Instructions: 

  • Heat oil in a large pot over medium heat.
  • Add onions, garlic, and ginger. Sauté until fragrant.
  • Add bell pepper and tomatoes. Cook until softened.
  • Stir in paprika, curry powder, and thyme. Cook for another minute.
  • Pour in fish stock or water. Bring to a simmer.
  • Add fish fillets. Cover and cook for 10-15 minutes until fish is cooked through.
  • Season with salt, pepper, and lemon juice.
  • Garnish with fresh parsley before serving.

Notes:

This stew is perfect with rice or bread.
