Instructions:
1. Heat sesame oil in a large pot over medium heat.
2. Add chopped onions and minced garlic, sauté until fragrant.
3. Stir in gochujang paste and cook for another minute.
4. Add diced potatoes, vegetable broth, and soy sauce. Bring to a boil.
5. Reduce heat and simmer for 30-35 minutes, until potatoes are tender.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Adjust the amount of gochujang paste to control the spice level.
