Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef cubes and brown on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in diced tomatoes, beef broth, salt, pepper, bay leaves, and thyme.
5. Bring to a boil, then reduce heat and simmer for 2 hours.
6. Remove bay leaves before serving.
Notes:
Serve with crusty bread or over mashed potatoes.
