Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add shredded chicken, corn, lima beans, diced tomatoes, and chicken broth.
Season with salt and black pepper. Stir well.
Bring to a boil, then reduce heat and simmer for 45 minutes.
Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge.
