Ingredients:  

Main Ingredients

  • 1 lb Chicken breast, cooked and shredded
  • 1 cup Corn kernels
  • 1 cup Lima beans
  • 1 cup Diced tomatoes
  • 1 cup Chicken broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add shredded chicken, corn, lima beans, diced tomatoes, and chicken broth.
  • Season with salt and black pepper. Stir well.
  • Bring to a boil, then reduce heat and simmer for 45 minutes.
  • Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge.
