Ingredients:

bison stew meat

olive oil

large onion
diced

garlic

carrots
sliced

potatoes

beef broth

tomato paste

dried thyme

tsp
dried rosemary
to taste
salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the bison stew meat and brown on all sides.
2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the sliced carrots and diced potatoes. Cook for a few minutes.
4. Pour in the beef broth and add the tomato paste, dried thyme, dried rosemary, and bay leaves. Stir well.
5. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 2 hours, or until the meat is tender.
6. Season with salt and pepper to taste before serving.
Notes:
Feel free to add other vegetables like peas or green beans if you like.
