Ingredients:  

Main Ingredients

  • 2 lbs bison stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 4 carrots sliced
  • 4 potatoes diced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the bison stew meat and brown on all sides.
  • 2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the sliced carrots and diced potatoes. Cook for a few minutes.
  • 4. Pour in the beef broth and add the tomato paste, dried thyme, dried rosemary, and bay leaves. Stir well.
  • 5. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 2 hours, or until the meat is tender.
  • 6. Season with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables like peas or green beans if you like.
