Ingredients:  

Main Ingredients

  • 6 stalks Celery chopped
  • 2 cups Vegetable Broth
  • 1 cup Carrots sliced
  • 1 cup Potatoes diced
  • 1 can Diced Tomatoes
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 cloves Garlic minced

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add the garlic and cook until fragrant.
  • 3. Add the celery, carrots, and potatoes. Cook for about 5 minutes.
  • 4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  • 5. Reduce heat and simmer for 30-40 minutes, until vegetables are tender.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot and enjoy!

Notes:

This stew is great served with crusty bread.
