Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Pour in the beef broth and diced tomatoes. Bring to a boil.
4. Add the carrots, potatoes, and celery. Reduce heat and simmer for 3-4 hours.
5. Season with salt, pepper, thyme, and oregano. Stir well.
6. Serve hot and enjoy!
