Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup carrots sliced
  • 2 cups potatoes diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup egg noodles
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Pour in the beef broth and bring to a boil. Reduce heat, cover, and simmer for 1 hour.
  • 4. Add the sliced carrots, diced potatoes, dried thyme, and dried rosemary. Simmer for another 30 minutes.
  • 5. Stir in the egg noodles and cook for an additional 10 minutes, or until the noodles are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add more vegetables like peas or green beans.
