Instructions:
Preheat your oven to 325°F (165°C).
In a Dutch oven or oven-safe pot, heat a bit of oil over medium-high heat. Brown the stew meat on all sides.
Add the chopped onions and garlic, cook until softened.
Add the beef broth, carrots, potatoes, salt, pepper, and thyme. Stir to combine.
Cover the pot with a lid and transfer it to the preheated oven. Cook for about 2 hours, or until the meat is tender.
Remove from the oven and let it rest for a few minutes before serving.
Notes:
Serve with crusty bread for a complete meal.
