Ingredients:  

Main Ingredients

  • 2 cups rice
  • 1 pound chicken
  • 4 large tomatoes
  • 2 red bell peppers red bell peppers
  • 1 onion onion
  • 2 cloves garlic
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2 bouillon cubes bouillon cubes
  • to taste salt
  • 1/4 cup vegetable oil

Instructions: 

  • Rinse the rice in cold water until the water runs clear. Set aside.
  • Blend the tomatoes, red bell peppers, onion, and garlic into a smooth paste.
  • Heat the vegetable oil in a pot over medium heat. Add the blended mixture and cook for about 10 minutes, stirring occasionally.
  • Add the thyme, curry powder, bouillon cubes, and salt. Stir well.
  • Add the chicken pieces to the pot and cook until they are browned on all sides.
  • Add 2 cups of water to the pot and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
  • In a separate pot, cook the rice according to the package instructions.
  • Serve the stew over the cooked rice.
