Instructions:
Rinse the rice in cold water until the water runs clear. Set aside.
Blend the tomatoes, red bell peppers, onion, and garlic into a smooth paste.
Heat the vegetable oil in a pot over medium heat. Add the blended mixture and cook for about 10 minutes, stirring occasionally.
Add the thyme, curry powder, bouillon cubes, and salt. Stir well.
Add the chicken pieces to the pot and cook until they are browned on all sides.
Add 2 cups of water to the pot and bring to a boil. Reduce the heat and let it simmer for 20 minutes.
In a separate pot, cook the rice according to the package instructions.
Serve the stew over the cooked rice.
