Ingredients:  

Main Ingredients

  • 1 lb Crawfish tails peeled and deveined
  • 1 cup Onion chopped
  • 1 cup Bell pepper chopped
  • 1 cup Celery chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive oil
  • 4 cups Chicken broth
  • 1 can Diced tomatoes
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Cajun seasoning
  • 2 tbsp Flour
  • 2 tbsp Butter

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  • Add the garlic and cook for another minute.
  • Stir in the flour and cook for 2 minutes, stirring constantly.
  • Slowly add the chicken broth, stirring to combine.
  • Add the diced tomatoes, salt, black pepper, and Cajun seasoning. Bring to a simmer.
  • Reduce heat and let simmer for 20 minutes.
  • Add the crawfish tails and cook for another 10 minutes.
  • Stir in the butter until melted and combined.
  • Serve hot over rice or with crusty bread.

Notes:

This crawfish stew is even better the next day, once the flavors have melded together.
