Butter
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the onion, bell pepper, and celery. Cook until softened, about 5 minutes.
Add the garlic and cook for another minute.
Stir in the flour and cook for 2 minutes, stirring constantly.
Slowly add the chicken broth, stirring to combine.
Add the diced tomatoes, salt, black pepper, and Cajun seasoning. Bring to a simmer.
Reduce heat and let simmer for 20 minutes.
Add the crawfish tails and cook for another 10 minutes.
Stir in the butter until melted and combined.
Serve hot over rice or with crusty bread.
Notes:
This crawfish stew is even better the next day, once the flavors have melded together.
