Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat
  • 1 cup Chopped Onions
  • 2 cloves Garlic minced
  • 1 can Diced Tomatoes
  • 1 cup Beef Broth
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 cup Corn Kernels
  • 1 cup Black Beans drained and rinsed
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat. Add the beef stew meat and cook until browned on all sides.
  • 2. Add the chopped onions and minced garlic to the pot. Cook until the onions are translucent.
  • 3. Stir in the diced tomatoes, beef broth, cumin, and chili powder. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 4. Add the corn kernels and black beans to the pot. Cook for an additional 10 minutes.
  • 5. Season with salt and pepper to taste. Serve hot.

This stew is even better the next day!
