Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions and garlic, and sauté until softened.
3. Add the tripe and cook for a few minutes until it starts to brown.
4. Add the carrots, potatoes, and diced tomatoes to the pot.
5. Pour in the beef broth and add the bay leaves, salt, and pepper.
6. Bring to a boil, then reduce heat and let it simmer for about 2 hours, or until the tripe is tender.
7. Remove the bay leaves before serving. Enjoy!
Notes:
This tripe stew is best served hot with some crusty bread on the side.
