Ingredients:  

Main Ingredients

  • 1 kg Tripe cleaned and cut into pieces
  • 2 pcs Onions chopped
  • 3 cloves Garlic minced
  • 2 pcs Carrots sliced
  • 2 pcs Potatoes diced
  • 1 can Tomatoes diced
  • 1 liter Beef Broth
  • 2 tbsp Olive Oil
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 2 pcs Bay Leaves

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onions and garlic, and sauté until softened.
  • 3. Add the tripe and cook for a few minutes until it starts to brown.
  • 4. Add the carrots, potatoes, and diced tomatoes to the pot.
  • 5. Pour in the beef broth and add the bay leaves, salt, and pepper.
  • 6. Bring to a boil, then reduce heat and let it simmer for about 2 hours, or until the tripe is tender.
  • 7. Remove the bay leaves before serving. Enjoy!

Notes:

This tripe stew is best served hot with some crusty bread on the side.
