Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 can Tomato Paste
  • 2 tbsp Soy Sauce
  • 1 tsp Thyme dried
  • 1 tsp Allspice ground
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the beef chunks and brown on all sides.
  • 3. Add the chopped onion and minced garlic, cook until softened.
  • 4. Stir in the tomato paste, soy sauce, thyme, and allspice.
  • 5. Pour in the beef broth, bring to a boil, then reduce heat to low.
  • 6. Cover and simmer for about 1.5 hours, stirring occasionally.
  • 7. Add the carrots and potatoes, cook for another 30 minutes or until tender.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat gently.
