Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in diced tomatoes and fish stock. Bring to a simmer.
Add the white fish chunks, clams, and shrimp. Simmer until the seafood is cooked through, about 10 minutes.
Season with salt, black pepper, and dried oregano.
Garnish with fresh parsley before serving.
Notes:
This stew pairs well with crusty bread.
