Pepper
Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chicken and cook until browned.
3. Add the onion and garlic, and cook until softened.
4. Stir in the tomatoes, chicken broth, cumin, and chili powder.
5. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Add the corn and black beans, and cook for another 10 minutes.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
