Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cut into cubes
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomatoes diced
  • 1 cup Chicken Broth
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 cup Corn frozen or fresh
  • 1 cup Black Beans cooked
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chicken and cook until browned.
  • 3. Add the onion and garlic, and cook until softened.
  • 4. Stir in the tomatoes, chicken broth, cumin, and chili powder.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Add the corn and black beans, and cook for another 10 minutes.
  • 7. Season with salt and pepper to taste.
  • 8. Serve hot and enjoy!

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
