Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 4 cups Chicken Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat and cook until browned on all sides.
  • Add chopped onion and minced garlic, cook until softened.
  • Pour in chicken broth, bring to a boil.
  • Add carrots, potatoes, salt, and black pepper.
  • Reduce heat to low, cover, and simmer for 2 hours.
  • Check seasoning and adjust if necessary. Serve hot.

Notes:

This stew is even better the next day!
