Instructions:
Heat olive oil in a large pot over medium heat.
Add beef stew meat and cook until browned on all sides.
Add chopped onion and minced garlic, cook until softened.
Pour in chicken broth, bring to a boil.
Add carrots, potatoes, salt, and black pepper.
Reduce heat to low, cover, and simmer for 2 hours.
Check seasoning and adjust if necessary. Serve hot.
