beef broth

scotch bonnet peppers

butter beans, drained
to taste

Instructions:
1. Heat the oil in a large pot over medium heat.
2. Brown the oxtails on all sides, then remove and set aside.
3. In the same pot, sauté the onions and garlic until softened.
4. Return the oxtails to the pot, add the beef broth, thyme, and scotch bonnet peppers.
5. Bring to a boil, then reduce heat and simmer for about 3 hours, or until the oxtails are tender.
6. Add the butter beans and cook for an additional 15 minutes.
7. Season with salt and pepper to taste before serving.
Notes:
Serve with rice and peas for a traditional Jamaican meal.
