Ingredients:  

Main Ingredients

  • 3 lbs oxtails
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 sprigs thyme
  • 2 whole scotch bonnet peppers optional, for heat
  • 1 can butter beans, drained
  • to taste salt and pepper

Instructions: 

  • 1. Heat the oil in a large pot over medium heat.
  • 2. Brown the oxtails on all sides, then remove and set aside.
  • 3. In the same pot, sauté the onions and garlic until softened.
  • 4. Return the oxtails to the pot, add the beef broth, thyme, and scotch bonnet peppers.
  • 5. Bring to a boil, then reduce heat and simmer for about 3 hours, or until the oxtails are tender.
  • 6. Add the butter beans and cook for an additional 15 minutes.
  • 7. Season with salt and pepper to taste before serving.

Notes:

Serve with rice and peas for a traditional Jamaican meal.
