Ingredients:  

Main Ingredients

  • 2 cups Black Beans cooked
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Tomatoes diced
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 4 cups Vegetable Broth
  • to taste Salt
  • to taste Pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a splash of oil.
  • 2. Add the chopped onion and minced garlic. Sauté until soft.
  • 3. Add the diced tomatoes, cumin, and paprika. Cook for another 5 minutes.
  • 4. Add the cooked black beans and vegetable broth. Bring to a boil.
  • 5. Reduce heat and let it simmer for 30 minutes. Season with salt and pepper to taste.
  • 6. Serve hot and enjoy!

Notes:

This stew is great served with rice or crusty bread.
