Instructions:
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onion and minced garlic. Sauté until soft.
3. Add the diced tomatoes, cumin, and paprika. Cook for another 5 minutes.
4. Add the cooked black beans and vegetable broth. Bring to a boil.
5. Reduce heat and let it simmer for 30 minutes. Season with salt and pepper to taste.
6. Serve hot and enjoy!
Notes:
This stew is great served with rice or crusty bread.
