Ingredients:  

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 large Bell Pepper chopped
  • 2 cups Chicken Broth
  • 1 cup Tomato Sauce
  • 1 tsp Oregano
  • 1 tsp Cumin
  • to taste Salt and Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chicken pieces and brown on all sides.
  • 3. Remove chicken and set aside.
  • 4. In the same pot, add onion, garlic, and bell pepper. Cook until softened.
  • 5. Add chicken broth, tomato sauce, oregano, cumin, salt, and pepper. Stir well.
  • 6. Return chicken to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 7. Serve hot with rice or bread.

Notes:

For a richer flavor, marinate the chicken with lime juice and spices for a few hours before cooking.
